Diversity, Equity, and Inclusion Panel
Monday, April 5 | 12pm to 1pm | Zoom
Dr. Willis-Wallace from the Office of Diversity, Equity, and Inclusion and Dr. Bell from ORDSA will host a panel discussion about diversity, equity, and inclusion as it applies to research. Objectives of this panel include do's and don'ts of research, inclusivity, and diversity within doing research, and diversity in research participants and why that is important. Presidential Research Series: Culinary Medicine: Food as Medicine at Iron Gate Tulsa

Individuals experiencing homelessness experience higher rates of many nutrition-related chronic diseases. Soup kitchens, food pantries, and shelters play a vital role in alleviating hunger, and medically-tailored menus may help to address key nutrient gaps among people experiencing homelessness. As Tulsa's largest stand-alone soup kitchen, Iron Gate provided 233,122 prepared meals and 45,630 bags of groceries in 2019. Since the COVID-19 pandemic, demand for program services has increased exponentially.
In this presentation, Lacey Caywood, MPH Candidate, Chef Valerie Carter, MPH, and Dr. Marianna Wetherill of the OU Culinary Medicine Program, will provide an overview of their community collaboration with Iron Gate Tulsa to integrate "food as medicine" into their soup kitchen operations. We will present findings from our nutrition needs assessment of Iron Gate guests and describe strategies used to pilot and implement new menu items. We will also discuss implications of our findings for food programs operated by other safety net organizations. Register for the Presidential Research Series here.
